Kaon at The Tides Boracay boasts of having a progressive Filipino cuisine under their name. With the reinvention of the classic local dishes that we are all accustomed to taste, this one heck of a place will surely leave you in awe as your taste buds explore their wide array of dishes.
We went to Kaon and indulged in three of their best-selling dishes.
Spareribs Sinigang
Traditional Filipino pork rib soup with kang kong leaves and mild chilies, flavored with sour tamarind
The Spareribs Sinigang is something new for us. For one, the sinigang dish is usually prepared with pork chunk cubes. It is not everyday that you see sinigang made from spareribs and hey, it’s actually better than the traditional sinigang! The ribs is very tender and the soup, perfectly sour.
Lumpiang Sisig
Pampanga specialty crisped pork in a thin rice wrap with spicy dipping sauce
At first bite, the lumpiang sisig comes of as ordinary but after a few chews, you will realize that it definitely tastes like the sisig you’re familiar with. It is a unique mix of flavorful and smokey meat that goes along really well with the rice wrap.
Crispy Beef Ribs Adobo

Another unique Kaon dish is the crispy beef ribs adobo. No other place serves this traditional Filipino dish this way. Amazingly, the braised beef riblets perfectly complement the sourness and saltiness of the soy sauce and vinegar.
